Creole Mixed Veggies

2 tbsp vegetable oil
1 large green pepper, chopped
1 medium onion, chopped
1 10-ounce frozen package of okra, cut
1 10-ounce frozen package of whole kernel corn
1 7 ½ ounce can tomatoes, cut up
½ tsp dried thyme
Few dashes mild or hot pepper sauce
Rice (preferably brown) cooked to serve it over

Makes 6 to 8 servings



Heat wok or non-stick skillet over high heat.  Add oil.  Stir fry the green pepper and onion for 5 minutes.  Stir in okra, corn, undrained tomatoes, thyme and pepper sauce.  Cover and cook over medium-high heat for 5 minutes or until vegetables are done and liquid is slightly thickened.  Serve over rice.
