CURRIED VEGETABLES

 

 

Curried Vegetables

2 tbsp vegetable oil
2 medium onions, sliced
1 clove garlic, minced
2 tsp curry power
2 medium potatoes, peeled and cut in cubes
4 carrots, sliced diagonally
1 cup peas
½ cup vegetable broth

 

4 to 6 servings

 

 

Heat wok over high heat.  Add oil.  Stir fry onions and garlic for 3 minutes.  Add curry powder and stir fry 1 minute.  Stir in potatoes, carrots, peas and broth.  Cover and simmer 10 to 15 minutes or until vegetables are done.
