Guacamole

 

 

Guacamole - traditional

Avocados date back to the Mayan area.  Legend has it that the first avocado was eaten by a Mayan princess around 291 B.C.  Avocados are rich in vitamin A and potassium.

2 ripe avocados, cut in half, pits removed
1 tbsp lime juice
3 green onions, minced
1 tomato, chopped into small pieces, seeds removed
1 large garlic clove, mince & mashed into a paste
3 tbsp fresh cilantro leaves
1 tsp chilli powder or cumin
salt & pepper to taste

Scoop avocado pulp into medium bowl.  Mash with a fork, leaving the mixture chunky.  Stir in lime juice.   Blend in the remaining ingredients.  Serve at once.

 

 

 

TIP:  If you need to store the guacamole, put the pit back into the middle of the bowl & squeeze additional lime juice on the surface. Cover tightly with plastic wrap and chill in the refrigerator.  If a dark layer forms on top, skim off & discard.
