Italian Mixed Greens
6 cups mixed salad greens (romaine, iceberg, Bibb lettuce, red or green leaf lettuce, etc.) washed & torn into bite size bits
2 tomatoes cut into bite size wedges
1 small red onion, thinly sliced or 2 green onions
1 small pepper - orange or yellow for color, thinly sliced
1/3 cup chopped fresh Italian parsley
2 tablespoons chopped fresh basil\
1 cup virgin olive oil
1 cup red or white wine vinegar
1 teaspoon sea salt
½ teaspoon oregano or Italian seasonings
½ teaspoon freshly ground pepper
1 tablespoon parmesan cheese (optional)
Combine all vegetables & herbs in a large bowl. In a cup or small bowl, stir together the olive oil, vinegar, & seasonings. When you are ready to serve the salad (Italians serve it after the main course) pour the dressing over the salad & toss to coat. Sprinkle with the parmesan cheese.
