Veggie Kebabs (makes 20)
Make all the veggies roughly the same size so they cook evenly.
20 wooden skewers (12 to 15 inch)
2 zucchini (cut into 1 inch pieces)
2 yellow summer squash (cut into 1 inch pieces)
1 green pepper ( cut into 1 ½ inch pieces
1 red pepper ( cut into 1 ½ inch pieces
1 yellow pepper ( cut into 1 ½ inch pieces
2 red or vindalla(mild) onions cut into 6-8 wedges
2 large tomatoes (cut into wedges) or 30 cherry tomatoes
Marinade; ½ cup melted butter, lemon juice, vegetable seasoning

Once a kabob is assembled, brush it with the marinade. Place on pre-heated grill and cook for 5-6 minutes, then turn the kabob & brush other side with the marinade. Cook another 5-6 minutes until vegetables are crisp-tender.
