Breakfast Burrito
4 flour tortillas (6-8 inch)
4 large eggs
1 tbsp milk
2 tbsp green or red pepper, chopped fine
2 tbsp green onion
1/3 cup shredded cheddar or jack cheese
2 tbsp butter
4 slices crisp bacon (optional)
1 ripe avocado
1 small tomato, diced & seeded
salt & pepper to taste
¼ tsp cumin or hot sauce (optional)
Salsa or light sour cream (as optional topping)
Warm the tortillas in the oven (at 350) or in the microwave. Put butter in a non-stick frying pan over medium heat. When butter has melted, add the onion and bell pepper. Stir and cook until soft.
Meanwhile, whisk together eggs, milk, salt, pepper and cumin in a bowl.
Add the egg mixture to the frying pan. Cook 2-3 minutes, stirring often. Once eggs begin to set, stir in cheese & bacon. Continue cooking till cheese is melted and eggs are fully cooked.
Take warm tortillas and put ¼ of egg mixture in the middle of each one (as a strip). Top egg mixture with tomatoes and avocados. Fold the sides of each tortilla over the filling then roll up loosely. Serve immediately.
