Grilled Snapper w. Salsa
1.5 k (3 lbs) snapper filets (8 pieces)
1 large sweet onion, minced
1 yellow bell pepper, seeded & minced
1 green bell pepper, seeded & minced
125 ml (1/2 cup) fresh, minced cilantro
450 ml (2 cups) fresh pineapple, minced
30 ml (2 tbsp) vegetable oil
3 limes, juiced
Combine peppers, onions, cilantro and pineapple in a bowl. Cover & chill. Mix the oil and lime juice together.
Grill the snapper on an oiled grill for 4 to 8 minutes on each side, basting with the lime juice mixture.
Remove fish when it is done – it will flake easily. Put fish on plates and spoon salsa over the snapper.
