Poached Fish

1 kg (2 lbs) sole fillets
15 ml (1 tbsp) lemon juice
45 ml (3 tbsp) skim milk
125 ml (1/2 cup) water
125 ml (1/2 cup) sliced mushrooms or peas
4 ml (1 tbsp) chopped parsley
1 ml (1/4 tsp) nutmeg
2 ml (1/2 tsp) paprika
lemon slices if desired

Put water, milk and lemon juice in a skillet and bring to a boil.  Add the fish filets and poach for 3 minutes.  Remove fish fillets and put them in a shallow baking dish.

 

 

 

Keep simmering the liquid in the skillet until it boils down to half.  Add your choice of peas or mushrooms & cook for 2 minutes.  Stir in seasonings.

Put the mixture over the fish filets and brown them under the broiler for 1 minute.  Serve with lemon slices if desired.
