Loaded Nachos

4 (6-8 inch) flour or multigrain tortillas
4 oz ground turkey
2/3 cup mild salsa (medium if you like spicier)
2 tbsp sliced green onion or mild peppers
2 tbsp tomatoes
½ cup shredded Mexican cheese blend (or any combination of Monterey Jack, Cheddar, Mozzarella)

  1. Preheat oven to 350.  Cut the tortillas into 8 wedges each.  Place on non-stick baking sheet.  Bake 5-8 minutes until crisp & lightly browned.
  2. Cook turkey in a small non-stick skillet until browned.  Break up meat with spoon & drain fat.  Stir in salsa.
  3. Sprinkle turkey mixture over tortilla wedges.  Sprinkle with onions/peppers & tomatoes. Top with cheese.  Put back in the oven just till the cheese melts.
