Spinach Salad with Strawberries

Spinach Salad with Strawberries:
herbed goat cheese, pine nuts and drizzled with a tangy poppy seed   Serves  6                                    

Dressing           ( single serving 2 Tbsp)
2 tbsp               extra virgin, cold pressed olive oil
¼ cup               freshly squeezed orange juice
½ tsp                 grated orange rind
2 tsp                 poppy seeds
1/2 tsp               dry mustard
1                      crushed garlic clove

6 cups                organic baby spinach, pre-washed
3 cups                organic strawberries, washed and sliced
1/3 cup              freshly roasted pine nuts, pumpkin and sunflower seeds
¼ cup                 thinly sliced red onion
¼ cup                crumbled herbed goat cheese


In a large bowl, combine the spinach, onion, nuts, seeds, herbed goat cheese and strawberries.

In a small bowl, whisk together the orange juice, oil, poppy seeds and orange rind. Pour the dressing over the salad and toss gently to combine.
